Elderflower Cordial

We’ve just picked some elderflowers and are having our first go at making cordial. The recipe describes ‘Summer in a bottle’ and the smell of fresh elderflowers and lemons is certainly heady.


25 elderflower heads

1.7kg of granulated sugar

2 pints of water

2 lemons, sliced

75g of citric acid

Heat sugar and water in a saucepan, stir until dissolved and briefly bring to the boil before turning off the heat. Place elderflower heads and lemon slices in a large bowl and pour the sugar syrup over them. Stir in the citric acid, cover with a cloth and leave to infuse for 24-48 hours. Strain the cordial through a muslin-lined sieve and pour into sterilised bottles. The cordial should keep for 2 months unopened in the fridge.
